Learn to make a savoury Pithivier, a classic French recipe that sandwiches layers of tender roasted vegetables, ham and aged cheeses between two layers of golden brown pastry. To produce this showstopper, we’ll start with homemade “rough” puff pastry. While traditional puff pastry is notoriously fussy, time-sensitive and error-prone, “rough” puff pastry is far less finicky.
